Friction Cooked Legume Products
Legumes can be processed into a wide variety of products, depending on your requirements.
Legumes can make a great base for snack foods, particularly chickpeas and beans, or can be added to other ingredients to add nutrients, taste, colour and texture to finished products.
These products can be flavoured with a huge range of ingredients, whether you want sweet or savoury snacks.
Hummus, Falafel or Bean Dips
The rapid friction cooking process enables you to create a range of shelf stable instant “just add water” dips. Processing chickpeas and then grinding them to a powder creates an instant hummus mix with the addition of water and/or lemon juice. The hummus can easily be flavoured and the mix also used to make falafels.
Beans can be processed in the same way. Following friction cooking, they can be ground into a powder to create an instant bean dip. This can also be flavoured, whether during the process or mixed in with the powder afterwards.
